SUMMER -THINNING the shoots
As the weather warms up and our vines put their energy into growing, we see healthy bright green leaves everywhere and the formation of the grapes. Daily temperatures are rising, and the rain is giving the vines all the moisture they need. We make better wine if we reduce the number of shoots a little, which we do by hand. Each shoot ideally carries one or two bunches, so by thinning the shoots each vine will have fewer bunches to ripen. This enables them to produce riper, more intensely flavoured fruit for us to harvest .It’s a task that requires great care and attention we tend the vines by hand , a slow process, but worthy of the time , the end result is perfection in a glass.

During February, ripening commences and we experience verasion .This makes the young grapes very attractive to birds, so we cover the vines with fine mesh nets.
